Fall Recipe: 30-Minute Dinner

Pasta with Marinated Cherry Tomato Sauce

YIELDS:
4 servings

TOTAL TIME:
30 mins

INGREDIENTS
1/2 sweet onion, very thinly sliced
1/2 bulb fennel, cored and thinly sliced
1/4 c. sherry vinegar
3 tbsp. olive oil
Kosher salt and pepper
1 lb. cherry tomatoes, halved
12 oz. gemelli pasta
2 tbsp. tarragon leaves
3 oz. fresh mozzarella

DIRECTIONS
In a large bowl, toss onion and fennel with vinegar, oil, and 1/2 tsp each salt and pepper. Toss with tomatoes and let sit, tossing occasionally, at least 15 minutes. 
Meanwhile, cook pasta per pkg. directions. Drain pasta and toss with tomato mixture. Transfer to a platter and sprinkle with tarragon, then tear mozzarella and scatter on top.

PER SERVING: 510 calories, 17 g fat (5 g saturated fat), 16 g protein, 275 mg sodium, 73 g carb, 6 g fiber
